With the weather playing truant there’s nothing like a bowl of this easy homemade soup to warm up with when the rain starts falling. This creamy (yet dairy-free) kid-friendly soup makes a delicious and nourishing lunch or dinner option served with some freshly toasted bread.
On days I plan to make this soup I like to roast the carrots/butternut squash/sweet potatoes in advance so the recipe comes together fast. It takes time to roast but it is the most important step to ensure you get that caramelized, deeply sweet flavour from the squash. For people who don't have access to butternut squash, don't worry. You can substitute with sweet potatoes or carrots.
