We’ve all grown up hearing that breakfast shouldn’t be skipped and that it should be the most important meal of the day. I know as Indians we want to make every meal the best meal. Seriously, we love food! But jokes apart, a good breakfast fuels you up and gets you ready for the day. Kids and teens who eat breakfast before they leave for school have more energy to battle the day. If you skip breakfast, you could end up being irritable, restless, and tired.

Vegan Omelette

Not sure what a vegan omelette is? Well, it’s an omelette without eggs. So just because you’re a vegetarian doesn’t mean you can’t make yourself an omelette. This is a really healthy recipe using tofu, rice flour, spinach and pine nuts. Tofu is gluten-free, contains no cholesterol and is an excellent source of protein and iron. Perfect for breakfast.

Ingredients

  • 170g firm Tofu sliced
  • 60ml Calcium-fortified Milk
  • 1 Tbsp Brown Rice Flour
  • 1 Tbsp Corn flour
  • 20ml Water, plus more if needed
  • 1 large handful of Baby Spinach
  • A handful of Pine Nuts
  • 1/2 medium sized Tomato sliced
  • Sea salt to taste
  • Black pepper to taste

Method

  • Add the tofu, milk, rice flour and corn flour in a blender and blitz until well combined.
  • Season with salt and pepper. The batter should flow slowly. If it’s too thick, add some more water until the batter reaches the right consistency.
  • Heat a non-stick frying pan and spray lightly with cooking spray. Reduce the heat to medium-low.
  • Pour the batter into the pan and swirl to cover the pan. Cover and cook for about 8 minutes. Check to see if it’s cooked well.
  • Heat a separate pan over medium heat and toss in the baby spinach and tomatoes. Cook for 3-4 minutes until they are cooked.
  • By now your vegan omelette should be cooked.
  • Place the tomatoes and spinach mix on a plate and place your omelette on it,
  • Garnish with pine nuts and dig into your fluffy omelette!

Crunch Dalia Patty

These crunchy dalia patties are not only very tasty but also make for a healthy breakfast. Full of fibre, dalia is easy to digest, helps in weight loss and is also considered a good weaning food for infants.

Ingredients – serves 4

  • 1 cup Dalia – Roasted for 5-6 minutes on low heat
  • 1 cup Cauliflower – grated and soaked in hot water for 10 minutes
  • 1 cup Paneer or 1 large Potato
  • 1 1/2 Tsp Salt
  • 2-3 Green Chillies – finely chopped
  • 3/4 Tsp Red Chilli Powder
  • 1/2 ” piece Ginger-grated
  • 1 1/4 Tsp Dry Mango Powder (Amchoor)
  • 2-3 Tbsp Coriander Leaves (hara dhania)
  • 1 Tsp Lemon Juice
  •  1-2 Tsp oil to fry

To Serve

  • 2 Tbsp Yogurt mixed with 2 Tsp green chutney

Method

  • Soak roasted dalia in water for an hour. Strain and squeeze out all the water carefully.
  • Strain the cauliflower and press in a strainer to remove excess water.
  • Mash the paneer. If you are using potato, boil it and then mash it well.
  • Mix all the ingredients together. Check the seasoning.
  • Take a part of the mixture and make a round or a square-shaped patty whichever you prefer. Don’t make it too thick or it won’t cook properly.
  • Pan fry in 1 tsp of oil in a non-stick pan till golden brown.
  • Serve hot with chutney.

Sprouts Tokri

Moong Dal sprouts, or for that matter any kind of sprouts are good for you. High in protein, potassium, zinc and copper, moong dal sprouts fill you up fast which makes it a good breakfast option. Keeps your energy levels up till you eat lunch.

Ingredients – serves 9

  • 9 slices of Brown Bread
  • 1 Tbsp Tomato Ketchup

Spread for the Bread

  • 2 Tbsp Olive Oil
  • 1/4 tsp Chilli Flakes
  • 1/4 Tsp Oregano
  • 1/4 Tsp Pepper
  • 1/4 Tsp Chaat Masala

Filling

  • 1/4 cup Moong Sprouts – Boiled
  • 1/4 cup Pomegranate seeds
  • 1/2 Onion – finely chopped
  • 1 Tbsp Coriander Leaves – chopped (hara dhania)
  • 2 Tbsp Imli Chutney
  • 1 Tsp Lemon Juice

Method

  • Place the bread on a rolling board and flatten it with the belan.
  • Mix all the seasonings with olive oil.
  • Take a large katori and cut out 3-4″ diameter circles from the bread.
  • Apply the spread on the round flattened pieces of bread.
  • Take a muffin tray and place the bread rounds in it.
  • Put the tray on the lower rack in the oven. Grill for 6-7 minutes or till it becomes evenly brown on the edges.
  • Mix all the ingredients for the filling and add to the bread tokri. Serve with tomato ketchup.
