Steamed Almond Coconut Modaks

Ingredients:

  • 1 Cup Rice Flour
  • 1 Cup Water
  • 1 Tsp Oil Oil For Greasing
  • A Pinch Of Salt

For The Filling:

  • 1 Cup Grated Jaggery (Gur)
  • ½ Cup Almonds Powdered
  • ½ Cup Grated Fresh Coconut
  • 1/2 Tsp Cardamom (Elaichi) Powder
  • 3 Tbsp Raisins
  • 1 ½ Tbsp Ghee

Method: 

  • For the filling, in a non-stick pan, add grated coconut, powdered almond and jaggery and cook over a slow flame till the jaggery melts and the mixture comes together.
  • Add the raisins, cardamom powder and mix well.
  • In another non-stick pan boil water and add 1 tsp oil and a little and stir. Reduce the flame, add the rice flour while stirring continuously.
  • Whisk well so that no lumps form. Cover with a lid and keep aside for about 5 minutes.
  • Grease your palms with a little oil and knead the dough while it is still warm; if the dough cools it will get lumpy if it is not kneaded. You could even use a hand blender to knead the dough.
  • Make even sized small balls of dough (2 inches in diameter) using oil. Then roll each of them into a round shape, 3½” in diameter.
  • Make 8 to 10 folds in the rolled dough with 1 cm. distance in between. To make a fold pinch the outer line of rolled dough a little bit ahead making 1-2 mm thick fold.
  • Add a spoonful of the filling to the dough.
  • Bring all the ends together and press to seal.
  • Prepare a steamer by adding water, and a tsp of oil and heat it till the water comes to a boil. While the water is simmering, place the modaks on a greased steamer plate and steam for 6 to 7 minutes.
  • Once the modaks are cooked they will turn translucent. Serve hot drizzled with pure ghee.

Moongdal Ragi Modak

Ingredients:

  • 1 ¼ Cup Of Moongdal Flour (Green Gram)
  • ¼ Cup Ragi Flour (Finger Millet)
  • ½ Cup Of Water
  • 1 Cup Of Sugar
  • ½ Tsp Cardamom Powder
  • Dry Fruits Finely Chopped For Garnish

Method:

  • For the sugar syrup, heat water and sugar in a pan on medium heat, stirring continuously. Add cardamom in the syrup. Keep it aside to cool.
  • In another pan, roast the moongdal flour and ragi flour in ghee on low flame for a few minutes.
  • Add the sugar syrup, milk powder and knead well to form a dough.
  • Divide the dough into small and equal portions and shape them in the form of modak using moulds.
  • Garnish it with slivered nuts and serve.

Oats Chocolate Modak

Ingredients: 

  • ½ Cup Finely Chopped Dark Chocolate
  • ½ Cup Oats
  • ¼ Cup Crushed Digestive Biscuits
  • ¼ Cup Milk
  • Nuts finely chopped for garnish

Method:

  • In a non-stick pan, heat milk and chocolate till it gets a smooth ribbon-like consistency.
  • Add the oats, crushed biscuits into the chocolate mixture and knead to form a soft dough.
  • Cool the dough in a refrigerator for 5-10 minutes.
  • Shape into modak and serve with finely chopped dry fruits.

Beetroot Modak

Ingredients: 

  • 1 Cup Grated Beetroot
  • 3 Tbsp Sugar
  • Orange Rind As Per Taste
  • 2 Cups Rice Flour
  • Ghee as per taste
  • 1 Cup Water
  • Salt as per taste

Method: 

  • In a bowl mix beetroot with sugar and keep aside.
  • In another pan, boil 1 cup water. Once boiled, add 2 cups of rice flour gradually, stirring continuously until the mixture thickens and resembles a dough.
  • Cool the rice dough and divide them into small balls.
  • Take 1 portion of the dough ball, make a cavity in the centre and stuff it with the beetroot mixture.
  • Gather all sides on the top to make modaks.
  • Steam the beetroot modaks in a steamer for 8-10 minutes.
  • Serve warm with ghee and orange rind.

Sugar-free Modak

Ingredients: 

  • 2 Cups soft Deseeded Dates or Dried Figs (anjeer)
  • 1 Cup assorted nuts (almonds, cashew nuts, pistachios
  • Hazelnut or raisins or cashew nut for stuffing
  • ½ Tsp Poppy Seeds roasted
  • 1 Tbsp Cocoa Powder
  • 1 Tbsp Desiccated Coconut
  • 1 Tsp Ghee + for greasing

Method: 

  • Grind the dates coarsely in a mixie.
  • Chop 1 cup of nuts into small pieces, roast them on low flame and keep aside.
  • Mix in the chopped nuts, dates, poppy seeds, ghee and cocoa powder to make a thick mixture.
  • Grease a modak mould and fill in one half using the date-nut mixture.
  • Place a hazelnut/ cashew or raisin in the centre and cover it with some more date-nut mixture. Make modaks.
  • Sprinkle with desiccated coconut and serve.

Fresh Fruit Modaks

Ingredients: 

  • 300 Gms Cottage Cheese (Paneer)
  • ½ Cup Skimmed Milk Powder
  • 4 Tbsp Powdered Sugar
  • 3 Tbsp Mashed Banana
  • 1 Tbsp Orange Juice
  • 3 Tbsp Pistachios, Chopped + To Garnish

Method: 

  • Knead the cottage cheese with sugar for 8-10 minutes till it is soft.
  • Add the skimmed milk powder, mashed banana, orange juice and mix well.
  • Grease a modak mould and fill in one half using the paneer mixture.
  • Place pistachio in the centre and cover it with some more paneer mixture.
  • Make modaks and refrigerate for 30 minutes.
  • Garnish with slivered pistachios and serve.
