Bharwa Style White Onion & Potato Sabzi

We all use onions in most of our cooking. The flavour onions impart to a dish is just so versatile, right? Now not many of you would have heard of white onions in India. Actually, white onions or safed pyaaz is a seasonal vegetable grown mostly in Maharashtra. 

Laden with vitamin C, flavonoids and phytonutrients, white onions are great for the gut, as a blood sugar regulator and help with sleep too. White onions are a definite addition to your meal plan. Today I am sharing a recipe with you that is easy to make and packed with flavours – the stuffed white onion and aloo sabzi. I do recommend you try it and don’t forget to tag us @kidsstoppress when you do!

Ingredients

  • Small Potatoes
  • Small White Onions
  • Besan/ Gram flour
  • 1 small katori Grated Coconut
  • 1 small katori Green Coriander Leaves
  • 2 Tbsp Jeera &Cumin Powder
  • 1 tsp Garam Masala
  • Pinch of Hing/Asafoetida
  • 1 Tsp Red Chilli Powder
  • 1 Tsp Oil
  • 1/4 Tsp Haldi/Turmeric
  • 1 Tsp Sugar
  • Salt

Method

  • Slit the onions and the potatoes halfway
  • In a bowl mix together besan, coconut, coriander leaves, salt, sugar, cumin powder
  • Add red chilli powder, coriander powder, and turmeric and mix well
  • Stuff the masala into the onions and potatoes
  • Be careful that you don’t break it. Fill as much masala as possible   
  • Heat oil in a kadhai 
  • Add hing and saute for a few seconds
  • Put the potatoes and let them cook covered for a few mins till they are half done
  • Add the white onions and mix well
  • Cover and let it cook till they are soft
  • Add salt and adjust the seasoning
  • The white onion bhaji is ready. Serve it with dal & roti.
