Dill/ Suva/Shepu – so many names for this tasty green herb that’s currently in season. Have you added it to your meal plan?

Fresh Dill is in season and normally available till early spring. I’m going to tell you why you need to use this more in your meals. Low in calories and contains several nutrients that are essential for good health, including magnesium, vitamin C, vitamin A, and fibre. These nutrients can help support the immune system, promote healthy vision, and aid in digestion.

Today I’m sharing a yummy recipe that my family loves using these healthy seasonal greens

Dill/Suva Bhaji

Ingredients

  • 2 Tbsp Oil
  • 1 Tsp Jeera/ Cumin Seeds
  • 1/2 Tsp Garlic chopped
  • 1 Red Dry Chilli
  • 2 Tsp Ginger Garlic paste 
  • 2-3 Potatoes boiled & chopped
  • 1 Tsp Haldi/ Turmeric powder
  • Salt to taste
  • A bowl of Chopped Dill/ Suva
  • 1 1/2 Tbsp Amchur Powder
  • 1/2 Jeera Powder
  • 1 Tsp Red Chilli powder

Method

  • Heat oil in a kadhai & add the sabut jeera. Wait till it starts spluttering
  • Add the chopped garlic and sauté for a few seconds
  • Throw in a dry red chilli
  • Add the ginger garlic paste and sauté till the raw smell goes
  • Tip in the chopped boiled potatoes
  • Sprinkle the haldi powder & salt
  • Cover and cook for 4-5 mins on low flame
  • Add the dill/suva leaves and stir to mix
  • Sprinkle amchur powder, jeera powder & red chilli powder
  • Mix well and serve hot!
