The monsoons are here and we are soon going to be saying good-bye to our favourite fruit – mango. Around this time of the year, I start looking for different ways that I can eat a mango because I know how much I am going to miss it. This fruit gives me the biggest joy and getting a sugar fix through a healthy dessert is just the icing on my cake. 

Recently when I visited Atmantan, I couldn’t resist eating this scrumptious mango mousse and when they told me that there was no refined sugar, I was taken aback. I knew I had to come back and share this yummy recipe. This mango cheesecake is packed with healthy ingredients like coconut milk, prunes and mangoes that are great for weight loss, cholesterol, immunity and is high in vitamins too.

Ingredients

  • Raw Cacao Powder
  • Prunes/Dates 
  • Coconut Milk
  • Cottage Cheese
  • Grated Coconut 
  • Mangoes 
  • Honey

Method:

  • Blend Cottage Cheese, Coconut Milk and Mango and blend to make a thick purée.
  • Mix the Cacao Powder with half tsp Prunes and Honey. Make this the first layer.
  • Top it with some mashed Mangoes. 
  • The third layer will be Mango Purée.
  • Let the dessert cool in the fridge till the Mousse sets.
  • Garnish it with the Mango Purée and Cacao Powder.
