Like I always say needs leads to innovation and we moms are just so good at that! Sometimes you tear your hair apart with food options that are healthy and yet appeal to children and they will just dismiss it in no time.

So here is my recipe to healthy junk food that serves as a great Indian snack. Its called Crispy Roti Noodle Salad. Well it has the oil used for frying but it you can add so much nutrition to it that when nothing works this one will. What I love about this recipe is that its flexible. You can add whatever works with your child and its very seasonal. E.g. In winters you can add strips of sweet potato & yam in the summers add raw mangoes. Add the nuts as you please for added taste. Add paneer(cottage cheese), feta or sour cream and it still tastes yum.

Crispy Roti Noodle Salad

Ingredients:

4 chapattis/Rotis

3 tbsps oil

2 garlic cloves, crushed

3 medium onion, sliced

1 green chilli, chopped (optional)

½ cup shredded iced cabbage/lettuce

½ cup chopped carrots

½ cup chopped green capsicum

½ cup chopped green tomatoes

1½ tsps tomato-chilli sauce

¼ tsp rock salt(sanchal) powder

1 tsp chat masala powder

Salt to taste

½ tsp lemon juice

1 tbsp finely chopped fresh coriander leave

1 tbsp finely chopped spring onion greens

 Method:

  • Cut chapattis into long thin strips.
  • Heat oil in a non-stick pan. Add garlic, onion and green chilli and sauté for 1 minute
  • Add cabbage, carrots, capsicum, tomatoes and sauté for 3 minutes.
  •  Lower heat and add tomato-chilli sauce, rock salt powder, chaat masala and salt. Mix well and cook for 1 minute
  • Add chapatti strips, lemon juice and toss on high heat to mix. 
  • For added taste you can fry some strips to add them like crispy noodles in a soup.
  • Feel free to add a tinge of sweet with honey if your kid slike it that way

Serve it hot so that your kids can enjoy it more. This one seems to work brilliantly on days I am running against time so it calls for a try
