Mornings are always a run to the finishing line kind of situation with kids to be dropped to the bus stop so quick nutritious Avocado Salsa on Toast is just what you need. It’s super easy and super delicious. The creamy avocado makes for a great spread on your toast.

Avocados are a superfood that we should definitely add to our daily diet. It has all the goodness of fibre and is rich in vitamins and minerals, such as B-vitamins, vitamin K, potassium, copper, vitamin E and vitamin C. Babies also love it – you can just mash it up for them and they’ll be licking the bowl clean.

Ingredients

  • 1 Ripe Avocado
  • 1/2 Finely  Chopped Capsicum
  • 1/2 Finely  Chopped Onion
  • 1/2 Finely  Chopped Tomato
  • Juice of 1/2 Lemon
  • Salt to taste
  • Red Pepper Flakes
  • Oregano
  • Crushed Black Pepper
  • Extra-virgin Olive Oil, for drizzling
  • 2 Slices Whole-grain Bread, toasted

Method

  • Cut the avocado in half, remove pit, and scoop the flesh into a bowl.
  • Add the lemon juice, capsicum, onion, black pepper, oregano and salt, to taste. Mash the ingredients together with a fork, keeping the texture slightly chunky.
  • Spread half the mash onto each piece of toast and garnish with some finely chopped tomatoes, onions, red pepper flakes and a drizzle of olive oil. Serve immediately.
