There are days when I just don’t have the time to sit down for a proper meal between work, chores and the kids. But when I start feeling hungry I start looking around for things to munch on. I used to reach for the packet of chips or biscuits. Nowadays when I know I have a packed day, I keep a few pick-me-ups lying around me – like these chewy energy bars.

Made with oats, gur, nuts and seeds these homemade healthy energy bars are packed with antioxidants, iron and a whole lot of goodness. Don’t be put off by the addition of ghee. It’s an excellent healthy fat to add to your food, obviously in controlled quantities.
The best thing about these bars is that you can add/subtract whatever you want. Not a chocolate chips fan? Use raisins or cranberries instead. No almonds? Throw in some unsalted sunflower seeds instead. Basically, as long as you keep the ratio of wet to dry ingredients the same, you can substitute just about anything you like.
