Do you like cake? Do you like cinnamon? How does a cinnamon cake sound?

It’s really simple to make but it tastes like you’ve slaved away in the kitchen for hours. It has a super soft and tender crumb that’s buttery and sweet, and cinnamon sugar topping that is just right for this tea cake.

Everyone deserves a little treat once in a while – whether it’s a slice with your morning cuppa or a piece post-dinner. A little indulgence is just what we need right now!

This is my family’s ‘favouritest’ cake recipes and this is the perfect time to share it with everyone. With everyone stuck at home, bake this cake for them and make their day sweeter.

Let’s get started. We have included options using egg and what you can use to make the cake without eggs.

Ingredients

  • 150g cubed Butter at room temperature
  • 3/4 Cup Castor Sugar
  • 1 Tsp Vanilla Extract
  • 2 Eggs
  • 1 1/2 Cup (185g) self raising Flour *
  • 2 Tsp ground Cinnamon
  • 1/2 Cup (125ml) Milk

For frosting

  • 1 Tbsp Castor Sugar
  • 1 Tsp Cinnamon Powder
  • 1 Tbsp melted Butter

Method

  • Preheat the oven to 180°C. Grease your baking dish.
  • Beat the butter, sugar & vanilla extract together until pale and creamy.
  • Add eggs one at time. (Beat the egg separately in a bowl before adding)
  • Sift the flour and cinnamon powder together.
  • Fold in the flour and milk alternately.
  • Bake at 180° C for approximately 30 minutes and keep checking after that. The temperature of every oven differs so keep checking once you cross this mark.
  • Put the cake out on a rack to cool.
  • Once it has cooled, brush the cake with the sugar-butter frosting.

Note:

  • For self-raising flour – To 1 cup flour add 2 Tsp baking powder
  • Eggs can be replaced with 2-3 Tbsp of curd (the watery part included)
  • Whatever ingredient you use please allow it to come to room temperature. It will affect the texture of the cake.
