Fibre-rich Vegetarian Waffles

Kids (and adults) don’t respond very well to food labelled healthy. Which is why we have a sandwich for you that contains a fibre-rich ingredient that they will be none the wiser about and it’s tasty. We have a sandwich they are just going to love. Anyone for waffles? In my house waffles is a staple on the weekend. We keep switching between sweet and savoury ones though. There is something very satisfying about biting into these crisp checkered pieces of food. So while there are tons of healthy sweet waffle recipes, we wanted to share a savoury high-fibre waffle sandwich with you today.

When a parent mentions words like fibre and protein, kids immediately feel they are being made to eat something that won’t taste good. We’re sure your kids are bored with the same old cucumber and jam sandwiches. So why not give these healthy waffles sandwiches a try. The best part is that it contains a fibre-rich ingredient that they will be none the wiser about and are just going to love.  

These crisp waffle sandwiches are a great option for your child’s school lunch box or as an evening snack when they get home from the park. The stuffing has all the right healthy ingredients and its simple to put together. 

We have added a secret ingredient you would never expect in a sandwich as a filling. Curious? Check out the recipe video and start cooking. 

Ingredients

  • Red & Yellow Bell Peppers finely chopped
  • Green Capsicum finely chopped
  • Carrot finely grated
  • Mayonnaise
  • Oats
  • Salt to taste
  • Pepper
  • Chilli Flakes
  • Cheese (optional)
  • Bread 
  • Butter

Method

  • Mix the coloured bell peppers, capsicum and grated carrots together in a bowl.
  • Add the oats and mix.
  • Spoon in the mayonnaise and mix well to combine. The mixture should come together at this point. Add more mayonnaise if needed.
  • Put salt, pepper and chilli flakes and cheese if you are using at this pint and give it a good stir. 
  • Preheat the waffle maker while you are preparing your mixture.
  • Once your mix is read, butter both sides of your slice of bread. Put a generous amount of the mixture on one slice and cover with another slice of buttered bread.
  • Place in the waffle maker and cook until your sandwich turns a golden brown and becomes crisp.
  • Serve with a glass of Pediasure.
