Ok now let’s have a look at what I whipped up for the kids to satiate their sweet cravings. Both recipes are simple and they are eggless too.

Easy Oreo Ice-Cream Cubes

I don’t know many kids who don’t like Oreos or Ice Cream. When you combine both their favourite things you get an easy dessert that’s yum, to say the least!

Ingredients

  • 2 Cups Whipping Cream 
  • 1 can Sweetened Condensed Milk
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Salt
  • 8 -10 Oreo Cookies
  • 1 Cup Frozen Blueberries/Strawberries
  • Ice Cube Tray

Method

  • Pour the cream into a bowl & whisk for about 5 minutes until you get stiff peaks. Put the mix in the freezer for an hour.
  • In a separate bowl, pour the condensed milk, vanilla extract and salt. 
  • Mix together with a whisk. 
  • Add whipped cream to milk mixture 1 cup at a time. Whisk together until smooth.
  • Crush the Oreo cookies by pulsing them in the blender OR place them in a plastic bag and roll a rolling pin over them to crush them to your desired cookie size.
  • Mix in the Oreo cookies and chopped frozen berries. 
  • Spoon the mixture into the ice cube tray compartments and freeze for at least 5 hours. (overnight preferred)

Gooey Eggless Chocolate Fudge

Ingredients For Base Fudge

  • 50g Butter
  • 50g Flour
  • 50g Cocoa Powder
  • 1 tin Condensed Milk

Method

  • Heat a pan and add room temperature butter to it and let it melt.
  • Once the butter has melted, add flour to the it and mix it well. The mixture will be quite thick so keep mixing till you get a smooth paste.
  • After that add the cocoa powder. Make sure you mix it into the butter-flour mixture well. This will thicken further.
  • Now add condensed milk a little at a time to the mixture and keep stirring, When you have used all of it up, give it a good stir and switch off the gas.
  • Now you can pour it into a tin loaf or a shallow dish or bowl depending on what shape you want.

For Walnut Fudge

  • Crush the walnuts with your hand and mix into the fudge batter. The amount of walnuts would depend on how much you want in your fudge.
  • Once you’ve mixed it into the fudge, take some more walnuts and sprinkle on top.

For Black Raisins Cashew Fudge

  • Take a mix of about 150g cashews and black raisins. Mix this into the fudge.
  • Allow it to set at room temperature for about 24 hours.
  • If you are in a hurry to set it, put it in the fridge.
  • When you want to serve the serve, heat it for a few seconds to enjoy the slightly gooey goodness.
