When the weather forecast calls for a cold day, comfort food sounds the most appealing. Staying indoors playing games, watching movies, and spending some quality time with family and cooking comforting food for the people you love sums up the perfect way to spend your days right.

So when everyone wants to snuggle up on the sofa under the razai dish out a bowl of warm comfort for everyone. I am sharing 2 recipes with you that are simple to make, extremely nourishing and are packed with ingredients that are known to boost your immunity.

There are so many such spices in our kitchen that can also be used as medicine. It is very important to have a strong immunity to protect yourself from the changing weather and the situation outside.

I’m sharing 3 recipes today – Jeera Pepper Rasam and Chicken Soup for the soul and an Oatmeal Hot Chocolate

Jeera Pepper Rasam

This is a great option that comes together quickly. It doesn’t use any dal. I normally just keep the spices roasted and powdered in an airtight jar so I don’t have to spend extra time doing that.

Ingredients

  • 3 Tsp Pepper/Kali Mirch
  • 2 Tsp Cumin/Jeera
  • Curry Leaves
  • 2 cloves Garlic
  • 2 Tomatoes
  • Ghee
  • 1/2 Tsp Turmeric/ Haldi
  • Pinch of Asafoetida/ Hing
  • 1 Tsp Mustard Seeds
  • Salt

Method

  • Dry roast black peppercorns and cumin seeds. Let it cool. Grind it to a coarse powder.
  • Purée or finely chop the tomatoes and crush the garlic
  • Heat the ghee and add the mustard seeds. Once it splutters, add hing, crushed garlic, curry leaves, 1/2 tsp of the ground pepper-cumin powder and roast for 10 seconds.
  • Add the tomatoes & turmeric
  • Mix in the remaining pepper-cumin powder and let it boil for 4-5 minutes over medium flame
  • Top with a few drops of ghee and you are done.

PS: As per Ayurveda pepper and ghee together will work magic for a cold.

Clear Chicken Soup

Ingredient

  • 1/2 kg Chicken 
  • 1 Onion chopped
  • Ginger Garlic as per taste 
  • 1/2 Moti Elaichi/Black Cardamom 
  • 2-3 Laung/ Cloves 
  • 1 Tej Patta/Bay Leaf 
  • Handful of coriander leaves 
  • Lemon Juice 

Method 

  • Heat some oil in the pressure cooker and add the cardamom, cloves and bay leaf.
  • Once it crackles add ginger garlic and the chopped onions and saute.
  • Put in the chicken pieces.
  • Now saute till brown on high-medium flame 
  • Once the chicken is nice and brown add water & salt to taste (about 1 litre) and cook for 2 whistles. 
  • Open the cooker once the pressure releases and strain the soup. Put it back to boil.
  • Take out chicken pieces shred and add them back to the soup.
  • Add coriander leaves, black pepper and lime juice and serve.

Oatmeal Hot Chocolate – recipe courtesy Reethika Singh @cupcakeree 

Ingredients

  • 1/2 Cup Rolled Oats 
  • 1 1/2 Cups Filtered Water
  • 1 Tbsp Unsweetened Dark Cocoa
  • 1/2 Tsp Vanilla
  • 1/4 Tsp ground Cinnamon
  • Pinch of Salt
  • 1/4 cup Milk of your choice (I used coconut milk)

Method

  • Rinse and blend the rolled oats with the filtered water in a high-speed blender until the oats are finely ground.
  • Strain through a cheesecloth/nut milk bag and add the oat milk to a saucepan along with the dark cocoa, vanilla, cinnamon powder and a pinch of salt.
  • Whisk over medium heat until the mixture starts to thicken (take this a little further and you’ll have yourself a dairy-free chocolate sauce).
  • Add in the milk of your choice (I used coconut milk) and whisk until heated through.
  • Remove from heat, add a sweetener of your choice to taste and serve warm.
