Imli/ Tamarind
Add a hint of tamarind pulp or paste to recipes like dals, curries or stir-fries instead of tomatoes and it comes close to the same flavour.

Roast the bell peppers and puree them in the food processor with lauki/ dudhi.

Lauki/ Dudhi & Imli
Bottle gourd as a replacement for tomato? Add a little imli to grated lauki, and you’ll have the taste and texture of tomatoes in your food.
Green Mango
As tangy and sweet-ish as tomatoes, raw mangoes are also texturally similar when cooked properly. Use less raw mangoes than you would with tomatoes.
Sour Curd
It provides body to the curry and the right kind of tartness. Whisk the yoghurt and add it towards the end of the cooking process to reduce the chances of it splitting.
Pumpkin
The simple kaddu/ pumpkins have a natural sweetness & creamy texture in puree form & it is literally half the cost of tamatar.
