We love to bake in my family and I often find that baking our own cakes and cupcakes makes it easier to regualte the amount of sugar or butter we cosume. On today’s episode of KSP TV, chef and founder of Palate Culinary Studio Rakhee Vaswani, shows us a recipe for Oats Muffins that is healthy and satisfying! High in fibre and ridiculously delicious with added fruit and chocolate this recipe is a must have in your repertoire.

Here is what you need.

Ingredients:
(Makes 6 Muffins)

  • 50g Butter – room temperature
  • 40g Oats Flour
  • 10g Flour (maida)
  • 50g Castor Sugar
  • 1 Egg
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • Blueberries
  • 1 Tsp Milk
  • Eggless Substitute – 1/2 mashed Banana + 1 Tbsp Baking Powder

Method

  • Preheat the oven to 160 C for 10 minutes
  • Put softened butter in a bowl.
  • Add castor sugar to the butter and beat together.
  • Break in an egg
  • Add the vanilla extract
  • Using a hand blender/whisk mix it all together
  • In a separate bowl, mix the oats flour, baking powder & baking soda
  • Add that to the egg-sugar mix
  • Put in a handful of blueberries
  • Mix it well to form a smooth batter
  • Add milk if the batter is thick
  • Put the batter into a piping bag
  • Pipe the batter into the muffin moulds
  • Sprinkle some oats on top 
  • Put it in the oven for 20-25 minutes
