Summer heralds the onslaught of different kinds of fruit. For most of us, it signals – mango season is here. While mangoes are eaten both raw and ripe. Today we’re sharing with your some raw mango recipes that your kids will enjoy as much as you do. 

Raw green mangoes are an excellent source of Vitamin A, B and C vitamins. So not only do they taste and smell divine, they’re loaded with nutrition too. Along with having a cooling effect on the body and can help regulate body temperature, which is especially beneficial during the hot summer months; raw green mangoes are also high in fibre – good for digestion and preventing constipation in kids.

Green mangoes are rich in nutrients that promote collagen synthesis and improve skin health also.

So time to buy some kachcha aam and get cooking and add these to your meal plan.

Raw Mango Kosambari

Kosambari is actually a mixture of raw vegetables (grated/cubed) that is combined with soaked dals.  The combination makes a yum and refreshing Indian salad. In this recipe, the addition of raw mango gives it just the right tanginess to bring this salad together. The kids will love it!

Ingredients

  • ½ Cup Boiled Green Moong Dal 
  • 1 small Raw Mango chopped 
  • 2 Tbsp Coconut Grated
  • Coriander Leaves Chopped
  • 1 Tbsp Lemon Juice 
  • Salt To Taste

To Temper:

  • 1 Tsp Oil 
  • 1 Tbsp Mustard Seeds
  • 1 Green Chilli
  • Curry Leaves 
  • Pinch of Hing/Asafoetida 

Method

  • Combine the green moong dal, raw mango, salt, lemon juice, and grated coconut in a mixing bowl
  • In a tadka pan, heat oil on medium heat and temper mustard seeds, curry leaves, green chili, and asafoetida. Fry for a minute and turn off the heat
  • Now add the seasoning and give it a nice mix.
  • Garnish the mango kosambari salad with chopped coriander leaves or cilantro and serve them immediately.

Note:

You can garnish with some pomegranate kernels.

Green moong dal can be replaced with yellow moong dal.

Adjust green chillies as per spice.

You can use moong sprouts instead of green moong dal.
