I discovered this recipe when one day my child refused to eat her Oats with fruits. And like I always believe experience leads to innovation, it did so in this case also. I tried making a batter out of the oats & banana & added some rava(semolina ) to it. We did have yummy pancakes which are a again a wholesome & heavy meal. What I love about this recipe is the amount of nutrition & fun you can add to it. Another fun recipe with oats is our very own Berry Infused Oatmeal . Coming back to the pancakes here is how you can get going
Preparation Time: 3 – 5 minutes
Cooking Time: 15 minutes
Ingredients:
- ¾ of a medium size banana
- 4 – 5 spoons of plain Quaker oats
- 6 – 7 spoons of Semolina or rava
- Milk
- Butter
- Honey to serve
Method:
Put the banana, milk, oats & semolina all in a bowl and make it into a batter with a hand mixer. Add milk to get the consistency right. It should not be too fluid. It should be thick enough to stay in a round shape.
Pour the batter enough to make one pancake on a non stick pan. Add butter on the sides for easy flipping and to avoid sticking. Cook it over slow flame until both sides are golden brown.
Serve with honey on the top. I do not recommend adding sugar to this recipe as banana has enough sugar & honey adds both sweetness & flavour.
You can also skip the banana and add another fruit like strawberries and serve with strawberry jam or fresh strawberries & cream instead of honey or keep the banana and add Nutella in the centre.
For the apple cinnamon flavour substitute the banana with the shredded apple or stewed apple & some cinnamon powder.
This is one yummy recipe and you can have so many variations in it
P.S. I insist you teach them how to use the fork & knife efficiently here. It is a dish where they can use it effectively and will help them relish the food better. If you haven’t started using the cutlery already please do so, it is not only important in terms of manners but also great eye &hand coordination exercise.
