Recipe: Kid-Friendly Red Bell Pepper & Oatmeal Muffins

I love to experiment with the kids in the kitchen. Cooking with them is a good stress buster and it’s not just a way for them to learn new things and experiment, but it’s a wonderful bonding experience as well.

The recipe we’re sharing with you today is extremely simple to put together and it’s one that my kids made all on their own. It’s simple, healthy and very tasty – what more can one ask for. Made with oatmeal flour, these muffins are high in dietary fibre. You can add or subtract whatever Mediterranean toppings your kids like/ don’t like. That’s the best part of this dish – you’ll still get a delicious muffin.
