Delicious Cheddar Soup – Serves 6

Celery, carrots, apples and potatoes join forces with cheddar cheese to create this tasty, relatively healthy soup. Trust us, your little ones will come back for seconds and thirds. It takes only 30 minutes to cook up this delicious delight. So the next time they want a yummy snack, you know what to make!

Ingredients

  • 2 Celery Stalks, cut into 1/2-inch dice
  • 2 medium Carrots, peeled and cut into 1/2-inch dice
  • 1 Granny Smith Apple, peeled, cored, and cut into 1/2-inch dice
  • 1 Tbsp Vegetable or Olive Oil
  • 5 cups vegetable/chicken broth
  • 1 medium Baking Potato, peeled and cut into 1-inch cubes
  • 2 cups Cheddar Cheese
  • 1 Tsp Worcestershire Sauce
  • Salt to taste
  • Croutons or Crusty Bread (optional)

Method

  • In a large saucepan, cook the celery, carrots, and apple in the oil over medium heat until softened for about 7 to 8 minutes.
  • Add the broth and potato and bring to a boil.
  • Reduce heat to low and simmer, covered, until the potato is tender. It takes about 15 minutes.
  • Puree the soup in a blender or food processor. Return to saucepan, whisk in the Cheddar and Worcestershire, and season to taste with salt.
  • Serve the soup with croutons or bread (if desired).

Broccoli Cheese Soup

Broccoli, is the enemy that unites almost every child. “Broccoli? Ewwww.” Yes, we have all heard that one. However, this super green is packed with Vitamin C, and calcium and has many health benefits. So try this insanely amazing soup recipe. Your children won’t guess broccoli is the star of this recipe!

Ingredients

  • 1 slice Cheese
  • 5 florets Broccoli
  • 1/2 cup Water

Method

  • Wash the broccoli florets well.
  • Steam the florets with water or for one whistle in the pressure cooker.
  • When cooled, purée the steamed broccoli with cheese.
  • Add water to adjust the mash consistency and yummy broccoli cheese soup or mash is ready.

Tomato Soup With Cheesy Bread – Serves 4

Tomato soup needs no introduction. This is undoubtedly a favourite with most people. With this recipe, you can use ready-made bread or make your own! We guarantee this soup will be an instant hit with the kids.

Ingredients

  • 1 tsp Dried Oregano
  • 3 Tbsp Garlic Butter
  • 1 Onion chopped
  • 1 Carrot chopped
  • 2 x 400g cans Plum Tomatoes or 4 cups fresh Tomatoes chopped
  • 1 Vegetable Stock cube
  • 100g half-fat Crème Fraîche
  • pinch of Sugar

Method

  • Heat the garlic butter in a pan until foaming.
  • Add the onion and carrot, and cook until softened.
  • Pour in the tomatoes and crumble the stock cube over the mix.
  • Add the oregano and simmer for about 20 mins.
  • Stir in the crème fraîche.
  • Blend and season – it may need a pinch of sugar if it tastes slightly acidic.
  • Add enough boiling water so that there is a good soup consistency.
  • Serve with warm cheesy bread.

Cauliflower Cheese Soup – Serves 6

Just like broccoli, cauliflower isn’t a favourite amongst children. But cheese makes everything better! This cheesy spin on an otherwise ordinary soup will have the family craving more!

Ingredients

  • 2 Tsp of Butter
  • 1 large Onion, finely chopped
  • 1 large Cauliflower (about 900g), leaves trimmed and cut into florets
  • 1 Potato peeled and cut into chunks
  • 700ml Vegetable Stock (from a cube is fine)
  • 400ml Milk
  • 100g Cheddar, diced

Method

  • Heat the butter in a large saucepan. Tip in the onion and cook until softened, about 5 mins, stirring often.
  • Add the cauliflower, potato, stock, milk and seasoning. Bring to the boil, then reduce the heat and leave to simmer for about 30 mins until the cauliflower is soft and the potato almost collapsing.
  • Whizz in a food processor or crush with a potato masher until you get a creamy, thick soup.
  • Top up with more milk to thin a little if serving in mugs.
  • You can make ahead up to 2 days in advance, cool, cover and leave in the fridge until needed, or freeze for up to 1 month. When ready to serve, warm through, ladle into mugs or bowls,

Hearty Pasta Soup – Serves 4

Pasta and soup? The kids will love this pasta soup. Which child can say no to pasta? The best part is that the soup is full of vegetables and really simple to make. Masterchef-parents, are you ready?

Ingredients

  • 1 tbsp Olive Oil
  • 2 Carrots, chopped
  • 1 large Onion, finely chopped
  • 1-litre Vegetable Stock
  • 400g can Tomato, chopped
  • 200g frozen mixed Peas and Beans
  • 250g pack fresh filled Tortellini (we used spinach and ricotta)/ regular whole wheat pasta
  • Handful of Basil Leaves (optional)
  • grated Parmesan to serve

Method

  • Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften.
  • Add the stock and tomatoes, then simmer for 10 mins.
  • Add the peas and beans with 5 mins to go.
  • Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked.
  • Stir in the basil, if using.
  • Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.
