1. Pasta Arrabiata with Carrot Noodles
Cut the carbs out completely and substitute noodles with coodles or for the uninitiated carrot noodles! Top them with your favourite marinara sauce and you have a simple, yet satisfying meal! Â
Beetroot is a winter staple and all you need to do here is roast them to maximise the flavour. Counter the sweet earthiness of the beetroot with tangy goat’s milk cheese and you have a weeknight winner!
Peas, again available during the winter season can be combined with peppery arugula and toasted pine nuts to make a yummy pasta dish that is sure to be a hit with the kids and the grown ups!
Spinach should be named as a super food for all the essential nutrients it has! Make a nice creamy sauce and add a bunch of spinach to it. Top with cheese and voila! Healthy and tasty pasta in minutes!
5. Butter Squash Fenugreek Pasta with Goat Cheese
Butternut Squash is not native to India but if you do find it all you need to do to extract maximum flavour is to simply rub with olive oil and roast it in a hot oven. Use the flesh and make your favourite sauce. I tried adding another winter staple, Fenugreek leave or methi and the combo was simply irresistable!
