As a mom, I am constantly running between work, classes, school drops and a ton of other things. So when I get a call saying I have some unexpected visitors dropping in – soon – it tends to throw me off my game.

I have a few ideas that you can throw together real quick and your guests will be left licking the bowl clean. These dips that we have curated take 15 minutes to make and with the right accompaniments are mouthfuls of yumminess.

Smoked Red Bell Pepper Dip

Ingredients

  • 1 Roasted Red Bell Pepper
  • ½ Cup Cashews/Walnuts soaked in some warm water
  • 2 Tbsp Olive Oil
  • 1 Tbsp Balsamic Vinegar
  • Salt To Taste

Method

  • Roast the bell pepper directly on the gas or you could leave it on the tawa while you go about setting up for the evening ahead. Just remember to keep an eye on it and keep turning it. The skin will blister and turn black.
  • Once the bell pepper has cooled down, peel the blackened skin off using a kitchen paper towel. This gives a beautiful smoky flavour to the dip.
  • Chop it up roughly and put it in the food processor.
  • Add the cashews/walnuts, olive oil and salt. Give it a quick blitz.
  • It will be slightly grainy. Add the balsamic vinegar and adjust the seasoning.
  • Smoky dip ready t be served with garlic toasties, nachos, pita triangles etc
